I love peanut butter, almond butter, cashew butter, you name it! Lately I’ve especially enjoy adding it on top of yogurt, on top of a homemade acia bowls, etc. The only problem is that to get it to drizzle nicely (rather than plop in one big chunk) over things that are cool/cold, you have to heat it up! So I wanted to create a delicious nut butter that was easy to add on top of cold treats – hence Honey Nut Butter Crumble came about.
I made a small batch (for self control purposes) but this recipe could easily be doubled or tripled. My measurements below made about 1/2 a cup of the crumble.
- 1/3 cup almonds
- 1/3 cup cashews
- 1/3 cup walnuts
- 1/2 tbsp coconut oil
- 1/2 tbsp honey
- 1 tsp cinnamon
Combine all incredients in a food processor or blender for about 2 minutes. The consistency will be like a crumbly, drier almond butter. If you want something that’s easier to spread on toast, more like actual almond butter, you could slowly add more coconut oil while blending.
I ate some of my Honey Nut Butter Crumble on top of Greek yogurt with sliced strawberries, it was a delicious snack that felt more like dessert 😀 the rest is stored in a small Tupperware container, but honestly I’ll probably eat it all by end of day!
