There was a report on the Today show this morning about how great lentils and chickpeas are for you and how they’ll help you live a long life. I kind of waver in my love for these foods, they’re very filling and a good source of protein but also have a lot of carbs. I know carbs aren’t the enemy but sometimes they do make me feel a little weighted down.
I’ve had a bag of frozen lentils and a can of chickpeas for quite awhile now that I needed to do something with. So I decided to combine them into a “burger” that will help me live a long, healthy life 😋
Ingredients, makes about 5 burgers:
- 1/2 cup of quinoa
- 1 cup of chickpeas
- 1 cup of lentils
- 2 1/2 cups of water
- 1/4 cup of gluten free bread crumbs (could use oats)
- 3 tbsp Olive oil
- 1/2 chopped onion
- 1 clove of fresh garlic
- 1 egg
- Pinch of red pepper, black pepper, and paprika
I cooked the quinoa, lentils and chickpeas together in a rice cooker because it makes life so easy. You combine all ingredients, add a tbsp of olive oil and the 2 1/2 cups of water. It cooks for about 10 minutes and everything is done perfectly. Let these ingredients cool down.
Chop up the onion and garlic. Combine in a food processor with the quinoa, lentils and chickpeas. Pulse the ingredients on low, you don’t want to pulverize them, just create somewhat of a combined mixture. Add in the spices, egg and bread crumbs, slowly mix until you have a good consistency for making burger patties.
Put about 2 tbsps of olive oil in the bottom of a pan and eat on low (I had it on heat 3 out of 10). Once the oil has heated up, carefully add each patty to the pan. Let cool approximately 5 minutes and then flip, cooking 5 minutes on the other side. Enjoy warm just as you would a regular burger! And if you have left overs, these are easy to reheat for lunches or dinner.
