I’m on a big goat cheese kick right now, I love it on salads, crackers, with strawberries, etc. Yesterday we got to taste-test food for our wedding reception. One of the samples was of mac n cheese, but it wasn’t gluten free 😕 that got me craving something with gooey, warm cheese! That’s where the thought to make fried goat cheese came from.
Before getting started, throw your log of goat cheese in the freezer for about 10 minutes – makes it much easier to slice without crumbling.
- 1/2 Cup gluten free Panko-type mix. I combined Ian’s panko breadcrumbs with Southern Homestyle’s corn flake crumbs. You could also buy plain corn flake cereal and food process into small crumbs.
- 1 small log of goat cheese
- 1 tbsp Parsley
- 1 tbsp Thyme
- Pinch of Salt
- 1 tsp Pepper
- 2 eggs
- Olive oil
Coat a skillet in a thin layer of olive oil and place over low-medium heat.
Combine all dry ingredients in one bowl. Beat the eggs in another bowl. Pull the goat cheese out of the freezer and cut into 1/3 inch slices. Coat each slice in egg on both sides, and then coat each side in the panko/spice mixture.
Let cool for a minute then enjoy! Leftover panko mix and eggs could be used for fried tomatoes as well.
