Mini Banana Nut Muffins with Chocolate Chips

Flaxseed meal was on sale at the grocery store this week which inspired me to get in the kitchen and bake up something delicious 😋 I started gathering up ingredients somewhat haphazardly and ended up with mini banana nut muffins with chocolate chips!

These are perfect for a little snack, dessert, or have a few for breakfast with your morning coffee. Only 2 tbsp s of flaxseed meal provide 3 grams of protein and 2430 mug of omega 3s (great for hair, skin and nails!) 

Mini Banana Nut Muffins with Chocolate Chips, recipe makes 24 mini muffins:

  • Preheat oven to 350 F
  • 1 banana
  • 3/4 cup of oats
  • 1/3 cup flaxseed meal
  • 1/4 cup of milk (I used flax milk to stick with the theme)
  • 2 eggs
  • 1/4 cup of nuts (I used pecans and walnuts)
  • 1/4 cup of sugar or substitute 
  • 2 tbsp of coconut oil
  • Chocolate chips to taste

Food process the oats and nuts. In a large mixing bowl, mash up the banana with the back of a fork (or put in food processor), combine all ingredients. I waited until the end to add the chocolate chips so that I could gauge how much to add without it taking over the batter.

Spray the muffin tins with cooking spray and fill to the top with batter. The mixture will not rise much during cooking so there’s no concern of it overflowing out of the tin. Bake for 12-15 minutes.

I sprinkled coconut flakes over top to finish them. Enjoy these protein-packed little treats!
